Broccoli Sprout Soup

When we had some extra broccoli sprouts, my brother offered to create this soup for me.
The carrots, corn, and onion used here were all frozen from previous harvests. The peas were also frozen, but were from the store.
The recipe calls for broth, which we used chicken broth here, but a vegetable broth would work just as well. Replacing with water could work if your desired spices are included as well.
We ended up using a cup more broccoli sprouts than the recipe calls for here. You can do this too if you want to taste the sprouts a bit more. It gave the soup a slightly spicy taste and makes the soup a darker green.
I have not tried the soup in an unblended state, but it could work without this step.
We served this with homemade bread and croutons for those who wanted them.
If you don't want to blend the sprouts, feel free to add the raw sprouts on top once served.
Broccoli Sprout Soup
1 Tbsp olive oil
1/2 cup onion (about one small onion)
1 cup chopped carrots (about 2 medium)
1 clove of garlic
1 cup corn
3 1/2 cups broth
1 cup peas
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1 cup broccoli sprouts (compacted)

Instructions:
1) Add olive oil and chopped onion to a pot. Saute the onions until they are translucent.
2) Add the chopped carrots, garlic, and corn to the pot. If using frozen, let it cook on medium stirring occasionally for a few minutes. This is just to thaw the ingredients.
3) Add the broth, salt, and pepper and peas to the pot as well. Bring it to a boil.
4) Once boiling, turn the heat down to medium and cover. Simmer until carrots are tender.
5) While the above mixture is cooking, prepare the broccoli sprouts.
Put the broccoli sprouts and water in a blender. Blend until smooth. It should be fairly runny.
6) Once the carrots are tender, turn off the heat and let it cool for a few minutes. This is allow the sprout mixture to remain alive instead of being cooked.
7) Put all of the soup in the blender with the broccoli mixture. Blend until smooth.
Notes:
For a quicker recipe, use frozen vegetables.
